Serving beef thinly sliced is a great way to manage portion size. Here, it is paired with a healthy helping of vegetables. Serve this dish with brown rice to make it a wholesome, nutritious one-dish meal.

225g fresh green asparagus

For the sauce:
4 tbsp soy sauce
1 tbsp sake
2 tbsp sesame oil
2 tbsp superfine sugar
2 tbsp red wine
3 tbsp ground sesame seeds
2 tsp finely crushed garlic
1 tsp grated fresh ginger

DIRECTIONS
1 Put all the ingredients for the sauce into a bowl and mix well, making sure the sugar dissolves. Leave it to mature for 2-3 hours.

2 Cut off the woody base and strip the side leaves from the asparagus. Remove ends from the green beans. Steam the vegetables so they are still firm to the bite. Drain. Plunge into chilled water and drain again.
3 Pour around ¼ cup of the sauce onto the beef and mix it in thoroughly by hand.
4 Spread the beef slices out on a plate. Place a spear of asparagus and some green beans down the center of each slice and then roll the beef around the vegetables, making a sausage shape. If there are not enough vegetables, just roll some of the beef slices.
5 As the beef is so thin, these rolls cook very quickly. You can either grill or pan-fry them. You might find it easier if you put a skewer through them.
6 Carefully cut the rolls into bite-size pieces and place on a serving plate. Pour over the remaining sauce and serve with rice.
